DISCUSSION:  It’s that time of year when many of us tend to let our diet “rules” loosen, and find our pants tighten.  The holidays are such a wonderful time of year full of merriment and of course treats.  For those who would like a healthy, yet delicious, option at the dessert table, please see my recipe for Raw Energy Balls below.  These little balls of goodness are a great source of protein, fats and carbohydrates. They are also gluten free, dairy free, soy free, vegan, raw and paleo!  You don’t need to feel guilty about eating these tasty treats as they are full of ingredients that have many health benefits.  Happy holidays!

ADULT DOSAGE: Bet you can’t eat just one! Makes approximately 20 balls.

CAUTION: possible over eating has been known to occur in which case put aside and walk away.

Dr.Marion guarantees that that all ingredients have been declared on the label. Contains no gluten, dairy, soy.

Note: Baking will vary in color from one batch to another depending on baker.

INGREDIENTS:

Serving Size: 20 RAW BALLS

Ground almonds (grind to consistency of flour to equal 1 cup)

Ground flax seeds (grind to consistency of flour to equal 1 cup)

Coconut oil

Almond butter (I like crunchy)

Medjool dates

Vegan chocolate chips optional (I use Enjoy Life mini chocolate chips, paleo friendly)

2 tbsp.

1/2 cup

4 pitted

1/2 cup

Optional ingredients: Add coconut flakes, cinnamon, nutmeg, vanilla, or cacao nibs

Mix all ingredients in a food processor except chocolate chips.  Stir in chocolate chips. Roll into small balls (about half the size of a golf ball).  I like to roll the balls in sesame seeds, unsweetened coconut or cocoa powder to cover the outside.  Cover a baking sheet with parchment paper and place completed balls on the parchment paper.  Refrigerate for at least one hour and store in the fridge.  Makes approximately 20 balls.  Enjoy.
